Fresh Spring Salad with Marinated Tomato Dressing

Salads (especially Quinoa Salads) are truly the way to my heart, but I know that getting all those finicky ingredients into them can sometimes be times consuming, or costly at the grocery store. So I have come up with a really simple salad that is easy to prepare, and super budget friendly.

You can make this when friends are coming round for a BBQ, pack it up in an air tight container for a road trip or is perfect to have laying around in the refrigerator for when you need a quick lunch – it will last up to a week in the fridge!

I know there are a lot of people out there who refuse to eat their greens, and get their minerals in but although this salad does not pack that much green colour, it certainly does make up for it in rich proteins, and intense amounts of flavours from this amazingly easy dressing!  If you want to read more about why I believe it is super important to make your own condiments, then check out this link – Condiments – hopefully it will convince you to rethink your next store bought dressing, or sauce!

Fresh Spring Salad with Marinated Tomato Dressing

Ingredients

  • 3 cups cooked quinoa
  • 1 can of chickpeas, washed, and strained
  • 1 cup of green peas
  • 3 tbsp EVOO, I used Kouzini Oil
  • juice from one lemon
  • pinch of salt
  • 1 tsp fresh cracked pepper
  • 3 tbsp nutritions yeast
  • Marinated Tomato Dressing:
  • 3 heriloom tomatoes, roughly chopped – i used red, orange and yellow
  • 1 spring onion
  • 1 red pepper, roughly chopped
  • 2 tbsp apple cider vingar
  • 2 tbsp olive oil
  • pinch of salt and fresh cracked pepper
  • Topped with:
  • lemon slices
  • edible flowers

Instructions

  1. Into a medium bowl add all of the dressing ingredients, and cover it with the lid or cling film and let it sit in the fridge over night.
  2. The next day transfer the dressing ingredients into a blender, and pulse till smooth!
  3. Now, into a large bowl combine all of the ingredients for the salad, and let it sit in the fridge for around 20 minutes while the flavours marry!
  4. Serve with the fresh dressing, and your sides of choice!
  5. The salad and dressing will last up to a week in the fridge, but you really will not have it around that long, it is that good!
  6. So simple, so delicious!
