Happy Thursday everyone! I hope everyone is enjoying their day so far… and if you live in Calgary I know you’re certainly enjoying all of this beautiful sunshine! It really is starting to feel like Spring here in AB!
Ive put together a really yummy salad, that can be enjoyed three ways! The one you see above is the salad on its own…. so delicious, simple and nutritious (the most important part), of course!
So if you’re feeling like you need to add more vegetables into your diet a particular day you can add this lovely salad mess into a pepper, and bake it! So delicious creamy topped with tahini, and hot sauce!
I don’t know how something so simple can seriously be so beautiful.
And lets us not forget about all of us Carb lovers. Over the past couple of months I have increased my meals to nearly 8 a day, which mean my body is burning food faster than it ever has. When someone doesn’t stop eating, then you’re body is always burning energy! So when you’re feeling like you need more energy and fuel to get you through that work day or work out then just add this yummy salad to a baked or boiled Chinese Sweet Yam! These yams have such a luscious and delicious flavour, surely to change anyones options about “unhealthy potatoes” and carbs.
This salad will last you in the fridge for at least 3 days, and is such a perfect little treat as a lunch, dinner, or snack! Won’t leave anyone in your family disappointed, and is super adaptable to different flavours and ingredients so I highly recommend you add vegetables you know your family loves, and enjoys!

2 orange bell peppers, cut the side of one off, to easily stuff (refer to photo)
1 tbsp olive oil
Chopped up peppers, use the lids of the two peppers
2 tbsp finely chopped red onion
6 radishes halved
1/2 cup chopped red cabbage
1 1/2 cups cooked quinoa
1 can red kidney beans, strained and rinsed
1 cup chopped coriander
1 green onion, finely chopped
salt & pepper to taste
1 tbsp cayenne pepper
1 tsp garlic powder
Boil one washed Chinese Sweet yam for around 45 minutes, or bake, its up to you
In the mean time add olive oil to a pan, and let it heat up on high heat for 30 seconds
Add peppers,onion, radish and cabbage to the pan. Lower the heat to medium, stir occasionally, cook on medium like this for 3 ish minutes, or until you notice the vegetable start to take on a nice golden colour
Now add the cooked quinoa, and beans, stir (WITH A FORK) to avoid sticking, and lower to low heat and let it continue to cook for 5 minutes
Now season with the salt, pepper, cayenne, and garlic
Stir this mixture using a large fork to avoid clumping, quinoa does not like to the be stirred with a spoon! ever!
For option 1) take the halved potato, and mash the inside in and add the mixture
For option 2) add the mixture to the pepper, and bake for around 15 minutes at 350
For option 3) enjoy as it is!!!!
To garnish these bad boys drizzle with more coriander, hot sauce and tahini and sesame seeds!
