I think I’ve done it again with this amazing, can’t-stop-eating salad. This Beet Salad and Feta recipe with feta cheese (whipped) and pistachios is seriously going to up your salad game in the best possible way. It’s perfectly comforting (if a salad can be comforting) for colder weather when beets are in season and the earthy flavor of the beets combined with the creamy feta, and the crunch from the pistachios are seriously delicious!

I love that they are a great iron source as it can be hard to get enough iron in your system, especially when you are eating primarily plant-based.

A lot of people don’t really think of eating beets, but they are so versatile. You can throw them into a salad like this, roast them up, and season them however you wish to eat as a side dish, grill them on the BBQ, or add them to a gourmet grilled cheese, the options are endless. Either is fine! but if you dont like too salty of salads then id do unsalted
