I think I’ve done it again with this amazing, can’t-stop-eating salad. This beet salad recipe with feta cheese (whipped) and pistachios is seriously going to up your salad game in the best possible way. It’s perfectly comforting (if a salad can be comforting) for colder weather when beets are in season and the earthy flavor of the beets combined with the creamy feta, and the crunch from the pistachios are seriously delicious!

Beets: This root vegetable has a lot of great benefits including being a source of fiber, folate, manganese, potassium, iron, and vitamin C. Holy! That’s a lot, right? I personally love that they are a great iron source as it can be hard to get enough iron in your system, especially when you are eating primarily plant-based.

A lot of people don’t really think of eating beets, but they are so versatile. You can throw them into a salad like this, roast them up and season them however you wish to eat as a side dish, grill them on the BBQ, add them to a gourmet grilled cheese, the options are endless. How do you like to eat beets?!

Pistachios: Pistachios are so tasty and have both antioxidant and anti-inflammatory traits. These special nuts can help lower your chances for cardiovascular disease and are high in fiber, minerals, and unsaturated fat that can help with your blood sugar, and blood pressure as well. 

How do you make this beet salad recipe with feta?

Like I said up top, this only takes 10-minutes to put together and requires just a few simple ingredients. Here’s how you put together this roasted beet salad:

Step One: Roast your beets up however you prefer

Step Two: Make your whipped feta (recipe here) then adding it to the base of 2 bowls! Note that you can sub the whipped feta for regular feta instead

Step Three: Top the feta with roasted beets, fresh herbs, and toasted pistachios

Step Four: Drizzle each with olive oil, fresh lemon, and dust with salt and pepper

Do I have to make this beet salad recipe vegan? Absolutely not! You can make the whipped feta with regular feta if you prefer. 

What can I substitute for lemon? You can use any vinegar or lime! 

I hate pistachios, what do I use instead? Roasted walnuts can be a wonderful addition as well!
