Hey guys! I am so happy to give you all this recipe, although at first I was not sure about them as they are very moist and soft (how I like them).. but turns out everyone at work really enjoyed them, and I was already in love with them.. but just unsure if everyone else would be on board! Really working on being more confident in my baked good creations… slowly but surely I will get there. Crazy to think that only about 3 years ago I was scared shitless of baking anything, (I was the worst baker of all time, and I am not joking when I say this, ok maybe a bit, I am greek after all… you cant suck at cooking that bad (;…).  Just goes to show if you put in the work you will reap the benefits!



I don’t know how far these bad boys would make it at the bake off, no offence Mary, and Paul but they are far to healthy for you liking (insert really serious sarcasm here). But really, these muffins are such a healthy treat, perfect for breakfast, lunch-time-snack or whenever the hell you want, really! I would certainly give these a go if your time for time, in need of a change or human.   They are really simple to make, and ingredients like the rose can easily be omitted to simplify the recipe!

Vegan Banana Chia Jam Muffins

  • Ingredients
  • Muffins:
  • 2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cups spelt flour
  • 1 cup rolled oats
  • 2 flax eggs (2 tbsp flax, 5 tbsp water)
  • 4 medium ripe bananas
  • 1/2 cup maple syrup, honey or agave
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips
  • 1/4 dried edible rose pedals
  • Jam:
  • 1 cup raspberries
  • 1 tbsp chia seeds
  • 1 tbsp coconut milk


  1. Preheat oven to 375, and grease muffins tins with coconut oil
  2. Prepare flax egg in a large mixing bowl. (2 tbsp flax, 5 tbsp water) Let set for 5 minutes.
  3. Prepare jam. Combine all ingredients to a sauce pan and cook on low heat for 5 minutes, stirring often.
  4. Set aside, and cool.
  5. Add banana and mash, it should be a creamy yet chunky consistency.
  6. Add honey, baking soda, salt and stir for a few minutes.
  7. Stir in vanilla, coconut oil and continue to mix.
  8. Add flour and oats and stir till you reach a thick and well combine consistency, now slowly fold in the chocolate and roses.
  9. Fill each muffin tin half way amongst all 12 tins.
  10. Add a small dollop of jam to each muffin, and add the remaining batter to the top!
  11. Bake for 20-22 minutes, or until your tooth pick comes out clean!
  12. Once cooled enjoy, storage in fridge for 3-4 days of freeze for weeks.
  13. I decorated with coconut for colour contrast and more roses!
