Hey guys! I am so happy to give you all this recipe, although at first I was not sure about them as they are very moist and soft (how I like them).. but turns out everyone at work really enjoyed them, and I was already in love with them.. but just unsure if everyone else would be on board! Really working on being more confident in my baked good creations… slowly but surely I will get there. Crazy to think that only about 3 years ago I was scared shitless of baking anything, (I was the worst baker of all time, and I am not joking when I say this, ok maybe a bit, I am greek after all… you cant suck at cooking that bad (;…). Just goes to show if you put in the work you will reap the benefits!

I don’t know how far these bad boys would make it at the bake off, no offence Mary, and Paul but they are far to healthy for you liking (insert really serious sarcasm here). But really, these muffins are such a healthy treat, perfect for breakfast, lunch-time-snack or whenever the hell you want, really! I would certainly give these a go if your time for time, in need of a change or human. They are really simple to make, and ingredients like the rose can easily be omitted to simplify the recipe!
