Description
This is such an easy queso sauce recipe that you’ll want to dip everything in. Serve with veggies, pita, crackers, or nachos!
Ingredients
Queso:
2 cups cashews
½ cup nutritional yeast
½ cup sundried tomatoes (in oil), strained
1 tbsp olive oil
1 tbsp garlic powder
1 tbsp onion powder
2 tsp ancho chili powder
2 tsp cumin
1 tsp vegetable stock paste
1-inch jalapeno
½ cup vegan cheddar cheese (grated)
1 1/4 cup hot water
Toppings:
extra jalapeno (sliced)
extra sundried tomatoes
fresh cilantro (chopped)
Instructions
Add the cashews to a small bowl and cover completely with hot water.
Allow sitting for 15 – 20 minutes, drain + rinse.
Transfer the cashews and ALL of the remaining ingredients to a blender.
Blend on high speed until smooth. Add more hot water to reach desired “queso-like” consistency.
Transfer to a serving bowl or dish and add jalapeno slices, sundried tomatoes, and chopped cilantro on top.
Serve warm with prepared fresh veggies and tortilla chips! DELICIOUS!
Notes
Pick your favorite flavor delicious flavor of vegan cheese OR use regular dairy cheese!
Spice up your queso by adding more jalapeno, chili powder, or add in hot sauce if you desire.
Add green chilis, diced tomatoes, or extra cheese on top of your queso before serving!
This is a HUGE HIT at parties! ☺
Store the queso in the fridge for 4 – 5 days in an airtight container in the fridge.
