This is seriously the best baked potato recipe. These potatoes are scored and drizzled with an easy basil oil that you can make at home!

Potatoes: I used red potatoes in this recipe but feel free to use whatever potatoes you have on hand or love to bake. Is there anything better than an oven-baked potato? 

Basil Oil: What makes this the best-baked potato recipe is the homemade basil oil. It’s super easy to infuse the oil and this adds such great flavor to this recipe.

How do you make the best oven-baked potato recipe?

  1. Preheat the oven to 350F and line a baking tray with parchment paper.
  2. Cut the potatoes in half-length-wise.
  3. Using a paring knife, going approximately ¼ – ½ inch deep, score the potatoes vertically and horizontally without cutting through the edges.
  4. Coat the tops of the potatoes with olive oil, salt, and pepper. I recommend using a brush so you don’t over-oil.
  5. Place the potatoes face down on the baking tray.
  6. Bake for 40 minutes.
  7. Increase the oven temperature to 400F and flip the potatoes facing up.
  8. Bake for another 15-20 minutes until golden on the scored side.
  9. To make the basil oil, add all ingredients to a blender and combine until smooth.
  10. Serve potatoes with drizzled basil oil (3-4 tbsp), vegan or regular sour cream, and fresh herbs!

Vegan Substitute: Use vegan sour cream instead of regular sour cream, if desired.
