I’m not sure if you’re ready for this buffalo chicken nachos recipe. I’m about to blow your mind! This vegan recipe is the perfect spin to your favorite buffalo chicken wings and makes a great appetizer, Friday-night dinner, or game-day snack.
❤️ Why You’ll Love Cauliflower Nachos
- Quick: Prep this in just 10 minutes and have it ready in 30.
- Delicious: The combo of the buffalo “chicken” and toppings makes this dish so good.
- Versatile: Add your favorite nacho toppings or dips on the side.

🍲 Ingredients
Buffalo Cauliflower – For a vegan version of your beloved buffalo chicken wings, I’ve used buffalo storebought cauliflower wings for this buffalo chicken nachos recipe. These “wings” are tangy with a kick. They’re coated in a crispy breading and tossed in a signature buffalo spice blend. They add a pop of flavor to these nachos. The cauliflower provides all the satisfaction of chicken wings while being lighter and more nutritious.
Hot Sauce – If you aren’t a big hot sauce person, you can definitely omit the hot sauce I added on the top at the end or choose whatever sauce you enjoy based on the level of spice preference. The beauty of hot sauce is that everyone can customize their heat level, making these nachos perfect for mixed spice tolerance groups.
👩🍳 How to Make Cauliflower Nachos
- Preheat your oven to 450F and line two baking sheet with parchment paper, and set aside.
- Transfer the Sol Cuisine Buffalo Cauliflower Wings to the one lined baking sheet and cook as instructed on the packet. Once cooked, reduce heat to 400F.
- Start by adding a layer of tortillas and cheese to the other lined baking sheet. Repeat for one more layer of chips. Then add jalapeños, olives, tomatoes, red onion, and onion flakes.
- Bake for around 15 minutes or until the cheese is completely melted and gooey.
- Once cooked, garnish with hot sauce of choice, more green onions and sour cream. You can also add more tomatoes and olives.
- Enjoy hot immediately!
🪄 Tips and Tricks
- Layers: Build your nachos with the heaviest items (cheese) on the bottom layers so everything gets properly melted and heated through.
- Even Distribution: Spread toppings evenly to ensure every chip gets loaded with goodness – no sad, plain chips allowed!
- Temperature Control: Don’t let the oven get too hot or the chips will burn before the cheese melts completely.
- Serve Immediately: Nachos are best enjoyed fresh from the oven while the cheese is still gooey and the chips are crispy.
🗒 Variations
- Cheese: Use dairy-free cheese for fully vegan nachos, or mix different cheese types for extra flavor complexity.
- Onion Flakes: Onion flakes are also known as onion granules. Fresh diced onions or green onions work as substitutes.
- Toppings: Have fun with the toppings, but I strongly suggest red onion, green onion, and tomatoes. Black beans, corn, or avocado make great additions, too.

🤔 Common Questions
Yes! Cut cauliflower into bite-sized pieces, toss with buffalo sauce, and roast at 425°F for 20-25 minutes until crispy. Season with salt and pepper for extra flavor.
Absolutely! Use dairy-free cheese and plant-based sour cream.
Use thick, sturdy tortilla chips and don’t overload with wet toppings. Add fresh items like tomatoes and sour cream after baking for the best texture.
You can prep all the toppings ahead of time, but assemble and bake just before serving for the crispiest results. Pre-assembled nachos will get soggy.
Black beans, corn, pickled jalapeños, guacamole, salsa, cilantro, lime wedges, or even diced bell peppers all make excellent additions.
The spice level depends on your buffalo cauliflower wings and how much hot sauce you add. Start with less and add more to taste – you can always make them spicier!
