Mango: A stone fruit that I love in both sweet and savory dishes. Mango is full of vitamins C & A, plus has fiber too!

Jalapeno: If you aren’t big on spice you can omit the jalapeno completely, or if you want it spicier, you can add more jalapeno or swap it for a hotter pepper.

  • 2 ripe mangos, diced
  • 1/4 cup chopped cilantro
  • 1/2 red onion, diced small
  • 2 tomatoes, seeds removed and diced small
  • juice of 1 lime (about 3-4 tbsp)
  • 1/2 tsp salt
  • 1 jalapeno, seeds remove and diced
