CHICKPEASANDGREENS Guys, I am having second thoughts! Do you think I really should have called my blog CarbsByMaria? I don't know about you but I am certainly noticing a theme after the past few months.  I would lying if I said carbs aren't my way of comforting myself during these cold months. Speaking of comforting, that is exactly what this Spicy Vegetable and Chickpeas Pasta did and damn did it feel good. This healthy dish is filled with just the right amount of spice and vegetables to satisfy your palette while keeping your body warm and detoxified.
potatosalad By now we all know I have a thing for potatoes and anything carbs but this recipe takes it all to a whole new level.  The recipe is as simple as can be and the turn out is amazing. First I was obsessed with my Smashed Potatoes, then My Greek Potatoes and let us not forget the best French Fries!  So are we really surprised that this Potato Salad is my recent addiction? I think not!
GP Confession Friday.  Thats a thing right?  Well I hope so because I am confessing that I love Greek Style Potatoes and that they make my life a better and more happy place.  Seriously, these Greek Style Potatoes are so crispy and crunchy on the outside while staying so steamy hot and soft on the inside.  Certainly mine and Andrews favourite go-to-snack and can be made in such large quantities to please a whole family for your next feast! Truly nothing better than using a natural, organic ingredient to create a plant based, healthy and nutrient filled dish.
CMT1 Well by now you must be able to tell that I have a thing for pasta and really simple recipes. This protein pasta dish fabulous, flavoursome and easy to follow. It takes you 10 minutes to prep your ingredients, 35 minutes to make and probably nothing short of a minute to inhale. This protein pasta dish is particularly special because it packs so many vegetables, spices and protein all in one.
lokai1 How could you not like a vegetable that taste and resemble pasta? I know what you're thinking, you can't.  I agree.  There is really something to be said about getting in your carbs whilst eating such a beautiful and versatile vegetable.  I mean how cool is it that I am using this gluten free veg as a bowl and adding loads of goodness to it to create a healthy, plant based and fast meal?
chickpeapizza As you all know I am pretty into the fitness and health scene so you would expect Pizza to be the last thing I blog about or even create, right? Well you are right, to a certain extent.  Ya, it is just pizza, a sauce and toppings but what you forget is how important CARBS are to me (they should be important to you too). I used to fear carbs more than life itself but now I have come to learn that a little treat, a lot of carb and laughter can really be good for the soul - not to mention my booty and muscle gains. You can balance your life with all the organic, natural, raw and plant foods you can but sometimes vegan recipes can be inspired by the not so healthy pizza recipes in the world.
POTATOSOUP1 I have a thing for meal prep and nourishing my body.  Kind of like how I have a thing for eating my greens, going gym and drinking loads of water. This sort of stuff has become second nature for me and I wanted to share with you this soup recipe that will make food prep that much more delicious. Do not be intimidated if you do not food prep, this soup can be enjoyed anytime, anywhere!
pastasauce Just when I thought I could not love pasta as much as I already do I discovered eggplant + tomato sauce. It is so creamy, filling, flavourful and fragrant, it suits perfect with Nathalie Sader's Chevre Cheese (plant based), pine nuts, and basil. The spices in this dish are to thank really as they bring out the natural sweetness and beauty of both the tomato and eggplant. If you have always been on the fence about eggplant then I am certain this dish will chance your perspective, forever!
squash I was inspired to make this Stuff Squash when I read Jamie Oliver's recipe of the day from his Jamie Oliver's Christmas Cookbook!  I have always looked up to him (and more than you know) so it just seems natural to make his recipe but transform it into my own, the greek way. This dish is extremely good for you and if we were counting calories then this dish comes in as probably the healthiest dish you could consume over the Holidays.
dw1 Who does not love Curry? We've been on a total kick in this house and I have never felt better! My skin is glowing, my body is energized and my stomach is loving all the bloat reducing spices. Healthy meal plans does not have to be time consuming or difficult! This Curry is a perfect example of how easy it can be to eat well, even when you're on a tight schedule! This healthy food dish is filled with beautiful and exotic spices all of which are extremely important for our diet! Stocking your pantry full with these spices is something I highly suggest.  Not only do they taste amazing in food but they are amazing for your skin, digestive system and for our immunity!
