Not to mention it is easy to put together, and, like any good salad, perfect for making ahead of time. Toss this orzo salad together a few hours or even a few days before, and because it keeps so well – it will taste great whenever you’re ready to eat.

Kale: Kale is one of my favourite superfoods. And it is super versatile! Whether you like to eat it raw, bake it and turn it into chips, use it in smoothies or use it in salads – kale is high in fiber, antioxidants, vitamins C and K, plus iron.

Cucumber: Did you know that cucumbers are 96% water? All that water in cucumbers help keep you hydrated. Plus, it gives cucumbers that perfect crunch in every bite.

How to Make My Mediterranean Orzo Salad

  1. Bring a small pot of water to a boil, add the orzo, and cook based on the instructions of the package.
  2. In a large bowl, combine all of the ingredients.
  3. Stir well until combined.
  4. Add extra olive oil, seasoning, cheese, or extra herbs to taste- then enjoy!

Instead of the Spred’em cheese, use the Cilantro Cashew Cream.

Replace the orzo with quinoa! Absolutely delicious!

Add anything to this salad and enjoy it as an on-the-go lunch, bring to potlucks, etc.!!

Ingredients

Scale

1 cup orzo (cooked)

2 tbsp. extra virgin olive oil

1 ½ cups green kale, roughly chopped

1 cup cherry tomatoes, halved

½ cup cucumber, finely diced

1 ½ tsp. salt

1 tsp. cracked pepper

1 tsp. dried oregano

½ cup fresh parsley, chopped

½ cup fresh cilantro, chopped

¼ cup pickled jalapeno, finely diced

Juice of 1 lime

½ cup Spread’em garlic + chives cheese


Instructions

Bring a small pot of water to a boil, add the orzo, and cook based on the instructions of the package.

In a large bowl, combine all of the ingredients.

Stir well until combined.

Add extra olive oil, seasoning, cheese, or extra herbs to taste- then enjoy!

Notes
