This super simple, and quick summer recipe is refreshing and perfect for the summer weather or your next BBQ. Whoever doesn’t like the combo of watermelon and mint, hasn’t lived! It is the perfect combination to make one of the most refreshing salads to pair as a side or eat it all to yourself.

Wait… watermelon and WHAT?

When I was younger I was introduced to this recipe and I thought the guy was crazy. Who on earth wants things like onions or feta cheese mixed with their watermelon? But sure enough he was like “Dude, you have to try feta and watermelon, it’s mind-blowing.” Yes, I thought he was crazy, but hey, I’m a “yes” person and gave it a try. Boy oh boy was he right. This recipe is one of my favs in the summertime and whether on a plant based diet or not, anyone will love it, even kids!

Vegan feta is your new fav addition to your life

What I love about this recipe is the sweetness of the watermelon pairs so perfectly with the bitterness of the lime, the tang of the onions, and saltiness of the feta. It’s the perfect combo and the best summer recipe. I know what you’re thinking: “But Maria, how do you make feta vegan?” and I’m here to enlighten you.

The simple trick is to use tofu. My tofu feta recipe has a ton of different spices that make this tofu turn into the taste of feta but plant based. All you need is a package of extra firm organic tofu, and the below spices/ingredients:

  • White wine vinegar
  • Lemon juice
  • Almond milk
  • Dried oregano
  • Dried thyme
  • Dried basil
  • Garlic powder
  • Sea salt
  • Olive oil

What’s your favourite summer recipe for BBQ season? This is definitely one of mine and a fan favourite. People are often surprised (like I was) that “feta”, watermelon and onions can all be mixed together but when they taste this combo, I promise, they’ll be impressed. Plus, with the high water contents of watermelon, it can help keep you hydrated on a hot summer day!

Ingredients
  

  • 1 small watermelon cubed
  • 1 avocado cubed
  • 1/2 long english cucumber cubed
  • 1/4 cup red pickled onion
  • 1/4 cup fresh mint or basil finely chopped
  • 1/4 cup vegan tofu feta
  • juice of one lime or lemon
  • 3 tbsp. olive oil
  • 1/2 jalapeno thinly sliced, optional
  • 1 garlic clove
  • season with salt + black pepper to taste

  • Into a large bowl gently stir all your ingredients.

Notes

Swap the vegan tofu feta for regular feta cheese if you wish!
This salad is a HUGE hit for summer picnics, BBQ's, and lunches!

Loved this salad!! It’s fresh and summery. I like tofu and eat it regularly but this feta tofu was out of this world! I couldn’t stop eating it!!
