Never underestimate the power of water. I have dreamed about this for almost 5 years, and it finally happened…. I recently had the @heyculligan team install a Reverse Osmosis filtration system in my home that reduces 90+ contaminants, including PFAS, lead, arsenic, nitrates, and chlorine (aka stuff I definitely don’t want in my food). The internet went wild for my juicy chicken, so I thought, “Why not go even bigger?” Move over, @CAVA—it’s time to make the ultimate edible Greek chicken pita bowl.

Here’s the deal: I marinate my chicken in all the good stuff—garlic, @diamondcrystalsalt, pepper, rigani, full-fat Greek yogurt (because why skimp?), and a generous pour of my family’s liquid gold: olive oil. Once it’s all had a chance to mingle, I stack the chicken high on a vertical skewer.

This recipe is knock-your-socks-off delicious and it’s so easy to make. Just add everything to the casserole dish and let it bake. The aroma that’ll fill your house will make your mouth water.

I have so many core, deep, happy memories related to this dish. Wednesday nights at church with my Greek community. We didn’t go to church on Sundays because our priest wasn’t from our city so every month we would gather on a random Wednesday night after service (he would travel 3 hours to be with us) and eat a beautiful meal. Each mother in the Greek community would bring an authentic, comforting dish. My mom was very busy raising us, driving us from sport to sport and working at our family restaurant - so this was always her go-to! Don’t confuse the 10 minutes of effort with simplicity or laziness, this dish is truly remarkable.

NOTE: The yellow mustard isn’t something my mother did when we were growing up. It’s completely OPTIONAL! This is a new trend among new-age Greeks BUT it is wonderful. You must try. I don’t want to hear you bashing it unless you give it a try.
