Snacks for Kids 5: Watermelon “Chocolate” Pops

Watermelon is in season, so why not turn them into healthy Chocolate and Coconut Pops??

All I can think of when I look at these beauties is Summer, BBQs’s, and good laughs with friends outside in the backyard.  So imagine the memories you would be creating for your little ones when you spend a few minutes making these with them, and then enjoy them together! There is truly something to be said about teaching children how to eat don’t you think? What you teach them is eventually passed down as knowledge and creativity to their children, and a part of you is forever with your kids when they are off to Uni, and when they have their own family!

Basically.. what I am trying to say is that simple treats can be HEALTHY, and just by teaching your kids how to make them you are promoting and starting food education! Which helps them get back to basics, and remember that FOOD IS OUR FRIEND!

So lets get started!

Set a bit of unsweetened desiccated coconut aside – around 1/2 a cup

Take a watermelon, and cut it width wise into 1 inch rounds.  Each round will make you 4 pops

Cut your rounds into “pizza slices”.  Now you need to get those popsicle sticks into the watermelon..so what I did was use a knife to carve a gap to easily slide the popsicle stick in!

Set your desired amount of watermelon pops a side, and prepare your chocolate.

So into a bowl add:

  • 2 tbsp Cacao
  • 1 tbsp coconut oil
  • 1 tbsp coconut nectar (honey will do)
  • Stir till smooth, creamy and rich!

NOTE: the chocolate recipe was food for around 6 (I ate 2 before the chocolate could get to them, oops).

If you have a squirt bottle you can pour the chocolate into it, but if not just begin drizzling the chocolate over the watermelon, and then immediately sprinkling on coconut before the chocolate dries!

Thats it! Simple right?

I suggest letting them cool in the fridge for 5 minutes before serving just so you know for sure that the chocolate has set, and has some time to get hard!

These are probably of my fav treats, and leave you feeling no guilt, energized and feeling alive!

TIP: use bamboo popsicle sticks so you can just reuse them instead of binning them each time!
