This spicy noodles recipe is such an easy lunch or quick dinner to pull together for dinner. It combines creamy peanut butter with the spice of gochujang, a spicy paste used in Korean cooking. It is loaded with flavors and you’ll want to have this on your regular recipe rotation.

Ingredient Notes for Spicy Noodle Recipe:

Mafalda Noodles: A type of ribbon-shaped pasta that is flat and wide with wavy edges. If you can’t find this type of noodle, you can swap it for really anything here, including rice noodles.

Gochujang: A red chili paste that is savory, sweet, and spicy. This fermented condiment is popular in Korean cooking and made from gochu-garu, glutinous rice, meju powder, yeotgireum, and salt.

How to make spicy noodles:

  1. Cook noodles according to package instructions and set aside.
  2. In a heat proof bowl add green onion, cilantro, gochujang and garlic.
  3. In a small frying pan or pot heat 1/4 cup olive oil and once hot, add to the bowl and stir to combine.
  4. To the bowl whisk in peanut butter, soy, sugar and lime juice. Add the noodles directly to the sauce bowl and stir to coat the noodles. Enjoy topped with chopped green onions, cilantro and peanuts.

I love this recipe. Really creamy and delicious. Very quick and easy to make. I substituted the pasta with brown rice noodles and it worked really well.
