Nothing says summer than a fresh bowl full of seasonal, fresh vegetables and healthy goodness. I love a good salad, or bowl, especially as the weather starts to heat up and I don’t want to have the oven or stove on. This Vegan Poke Bowl is a great easy-to-make lunch or dinner, and I can’t wait to share this recipe with you so you can whip it up at home.

Is there such thing as vegan tuna? 

Yep, there is. It is not a myth! For this recipe, I used Good Catch Foods vegan tuna which is made from 100% plant-based ingredients. I’ve used this tuna before in other recipes, and I really love it because it’s so easy to just throw it into any recipe to add some flavour and a kick of protein. Normally you would see vegan poke bowls made with tofu, however, this is something different and adds that fishy taste that you usually would get in a regular (non-vegan) poke bowl. 

Good Catch Foods Plant-Based Tuna comes in a variety of different flavours (original, oil & herbs, or the Mediterranean), so you can really add the flavour you are craving when you make this.

What is vegan tuna made with?

Their tuna is made with a special 6-plant protein blend of peas, chickpeas, lentils, soy, fava beans and navy beans. This combo of legumes adds the protein, but also the texture you’d usually get in tuna. Mix that with the algae oil for the seafood flavour, and omega-3 DHA for the health benefits that fish usually provides, you have a well-rounded substitute that’s plant-based and delicious. 

How do you make a vegan poke bowl? 

The sauce

Now let’s get to this recipe. First you’ll want to make the sauce. To do that, you combine all the below ingredients in a bowl and mix them all together. 

  • Sambal oelek (Indonesian chilli sauce)
  • Soy sauce, tamari or liquid coconut aminos
  • Rice wine vinegar
  • Minced ginger root
  • Minced garlic clove

The tuna mixture

This sauce really packs a punch. Set it aside and move onto your tuna mixture. All you’ll do for this is simply add all these ingredients together in a bowl and mix them together.

  • Sambal oelek

The bowl

Once you have your sauce and your tuna mixture, it’s time to build your vegan poke bowl. Get creative here. There are no rules! You can really add anything you have on hand. However, here is what I added to mine:

  • White or brown rice 
  • Fresh cucumber 
  • Pickled radish (recipe to make these here)
  • Fresh greens (spinach, arugula) 
  • Avocado
  • Kimchi
  • Sesame seeds
  • Fresh lime juice 
  • Fresh herbs of choice

Ingredients
  

For the bowl:

  • 4 cups Cooked white or brown rice
  • 2 cups fresh cucumber thinly sliced
  • 2 cups pickled radish
  • 2 cups fresh greens like spinach or arugula or pickled cabbage
  • 1 large avocado cubed or sliced
  • 1/2 cup kimchi
  • fresh lime
  • 2 tbsp. black sesame seeds
  • 2 handfuls of fresh herbs dill and cilantro are best!

For the sauce:

For the tuna:

  • 2 Good Catch Foods Packages
  • 1 tbsp. rice wine vinegar
  • 1 tsp. minced ginger root
  • 1 tsp. sambal oelek
  •  
  •  

Instructions
 

  • Prepare all your bowl ingredients and set them aside.
  • For the sauce, simply add the ingredients to a small bowl or jar and stir till well combined.
  • For the tuna, simply add the ingredients to a small bowl or jar and stir till well combined.  See notes.
  • To assemble the bowl, begin by adding the rice, then veggies, herbs, sesame seeds, tuna and slather it all with that delicious sauce!

Notes

Rinse your Good Catch Foods Tuna for 3 minutes under cold water.  Wash thoroughly and then strain and add to a large bowl with the rest of the ingredients.
