I don’t know many people who do not have a soft spot for Banana Bread.  Whether you enjoy it on the go, or in front of the fire with a warm cup of tea it always tastes delicious. I think it is certainly a staple in most households, and I have taken the liberty of transforming a family recipe into one of my own! I hope you all enjoy.

Description

A classic, delicious staple with a twist. Made with spelt flour, no sugar, few eggs, and no dairy!


Ingredients

  • Ingredients: all organic except salt, soda and powder
  • Dry:
  • 1 1/2 cups of spelt flour
  • 1 tsp. salt
  • 3/4 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 tsp. cinnamon
  • Wet:
  • 2 large eggs, beaten
  • 1/2 cup agave nectar (vanilla flavoured is really good too, but then don’t use vanilla)
  • 3/4 cup unsweetened apple sauce – homemade if you can
  • 1 teaspoon vanilla
  • 1 1/2 cups mashed banana
  • Additions:
  • 1/2 cup dark chocolate chips
  • Paired with homemade raspberry jam, and fresh strawberries but be creative and add your favourite fruits and healthy jams (homemade, with little sugar!)

Instructions

  1. Shift all dry ingredients into a large mixing bowl – done to avoid clumps
  2. Into a medium mixing bowl combine all wet ingredient and stir well
  3. Create a well in the dry ingredients, and pour in the wet ingredients
  4. Stir till combined, but do not over stir
  5. Add chocolate chips, and give one final stir
  6. Pour mixture into an 8×8 bread tin and bake in a preheated oven at 375C for 35 minutes, or until the your toothpick tells you its ready!
