This easy summer pasta salad recipe can be made in only 20-minutes and is perfect for summer meal prep or an easy meal.

Summer is all about easy, fresh dishes that don’t require you to spend all the time in the kitchen but allow you to eat well while enjoying the nice weather outside of the house. This summer pasta salad is just that. It’ll take only 20-minutes to make, and is a great dish to eat on its own, or as a side at a BBQ or potluck.

Ingredients:

Mangos: Mangos are in-season during the summer months and they’re so fresh and delicious. To this savory dish they add a bit of sweetness but you can swap them out for berries like blueberries or strawberries instead, or omit them completely.

Capers: Capers grow wild across the Mediterranean and parts of Asia. You can usually find them in the pickled food section of the grocery store with olives. Capers are savory and add a pop of flavor to any dish.

How to make summer pasta salad:

  1. Cook the fusilli according to the instructions on the package. Allow to cool.
  2. In a small bowl, mix and combine all of the ingredients for the dressing. Set aside.
  3. In a large bowl, add ALL of the remaining ingredients. Make sure to mash the avocado slightly as you add, and combine the salad.
  4. Add the dressing, mix to combine, and adjust seasoning to taste.
  5. Garnish the salad with extra basil and enjoy!

How do I make this salad vegan? Replace the feta cheese with your favorite dairy-free substitute! 

Pasta: Swap the fusilli for any pasta shape you wish! Even make this gluten-free. 

Protein: To add your daily dose of protein, add 1- 398ml can of chickpeas OR whatever you prefer YUM! 

Mango: Play around with the ingredients and swap ingredients or add to it! Take out the mango and add peaches or cantaloupes instead OR remove the sweet flavor and pop in some cucumber and red peppers!

Ingredients
  

For the Dressing,

  • 2 tbsp. olive oil
  • 2 tbsp. grainy mustard
  • 1 tbsp. maple syrup
  • 1 ½ tsp. salt
  • 1 tsp. cracked black pepper
  • 1 tsp. garlic powder
  • Juice of 1 lemon
  • ¼ cup fresh basil chopped

For the Salad,

  • 250 g cord-style fusilli pasta cooked
  • 1 cup red cherry tomatoes halved
  • 1 cup yellow cherry tomatoes halved
  • 1 ½ – 2 mangos diced
  • ½ large avocado diced
  • ½ cup feta cheese crumbled
  • ½ cup red onion diced
  • 1/3 cup capers
  • 3 tbsp basil chopped

Instructions
 

  • Cook the fusilli according to the instructions on the package. Allow to cool.
  • In a small bowl, mix and combine all of the ingredients for the dressing. Set aside.
