This easy vegan gingerbread loaf scream Christmas, and it's super easy-to-make. Tastes just like the Starbucks version but better.

Oh the weather outside is frightful, but this vegan gingerbread loaf is so delightful! Okay, picture me singing that in your head while you bake up this amazing Starbucks dupe this holiday season.

How do you make gingerbread loaf?

This vegan gingerbread loaf will have your whole house smelling like heaven. Plus, it won’t take too long to whip up and your whole family is going to love this. Here’s how you make it:

  1. Preheat oven to 350F and line a bread tin with parchment paper and lightly grease with cooking oil spray
  2. Into a large bowl, combine the flours, baking soda, baking powder, salt and spices
  3. In a medium-sized bowl add the applesauce and whisk in the melted butter, brown sugar, egg replacement, vanilla and almond milk. Whisk just till combined.
  4. Add the flour mixture to the wet mixture and stir with a wooden spoon to well combine
  5. Transfer batter to the baking tin and bake for 50-55 minutes
  6. While the loaf bakes, make the glaze by combining the icing sugar and water in a bowl.  Stir till combined
  7. Cool for 5 minutes in the bread tin and remove and cool completely on the wire rack
  8. Serve with vegan butter or drizzle whole loaf or each piece individually with the glaze

How do you make this recipe vegetarian?

If you aren’t into vegan baking and don’t have all the ingredients on hand to make this recipe vegan, then no problem! You can easily make this recipe vegetarian instead. All you have to do is:

  1. Swap out the egg replacement with a regular egg
  2. Use regular butter versus vegan 
  3. Use Greek yogurt versus vegan yogurt
  4. Voila!

Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tbsp. ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp. allspice
  • 1/2 tsp nutmeg spice
  • 1 cup applesauce
  • 1/3 cup vegan or regular butter then melted
  • 1 cup brown sugar
  • 2 egg replacements
  • 1 tsp vanilla
  • 6 tbsp. almond milk

Glaze:

  • 1/2 cup icing sugar
  • 1-2 tsp water

  • Transfer batter to the baking tin and bake for 50-55 minutes.
  • While the loaf bakes, make the glaze by combining the icing sugar and water in a bowl.  Stir till combined.
  • Cool for 5 minutes in the bread tin and remove and cool completely on the wire rack.  Serve with vegan butter or drizzle whole loaf or each piece individually with the glaze!

Notes

You can use a regular egg if needed. It will cook the same.
NOTE:  use as many or as little spices as you like.  The more the better, in my opinion!

I happened to already have everything in my pantry just waiting for me to whip this gingerbread loaf up and WOW was I so glad I did! It is the perfect blend of spiced gingerbread flavor and the addition of the applesauce makes the loaf come out super moist. This will definitely be a dessert I will make every holiday season.

I made this loaf today and it’s amazing. I topped it with vegan cream cheese. The only change was using coconut brown sugar instead of regular brown sugar. It was the perfect treat to have while decorating the tree. The house had this aroma of warm spices throughout. Lovely! I added a picture on Instagram and tagged you.
