- Add the cubed watermelon to a large platter or serving bowl along with the thinly sliced onion and chopped pistachios.
- Make the dressing by whisking together all of the dressing ingredients.

Ingredients
- 6 cups cubed watermelon
- 1 cup cubed feta cheese
- 8-10 fresh mint leaves
- 8-10 fresh basil leaves
- ½ cup thinly sliced red onion
- 1/3 cup chopped pistachios
For the dressing
- 1 tbsp fig jam
- 3 tbsp white balsamic vinegar
- 2 tsp white wine vinegar
- 1 tsp honey
- ¼ cup olive oil
- 1 tsp salt
- ¼ tsp ground pepper
- ¼ tsp chili flakes
- 1 large or 2 small garlic cloves pressed
Instructions
- Add the cubed watermelon to a large platter or serving bowl along with the thinly sliced onion and chopped pistachios.
