How to Make This Whipped Feta Dip

  1. Preheat the oven to 375F and line a baking sheet with parchment paper.
  2. Cut the half-head of cauliflower into medium to small-sized pieces. 
  3. Transfer the cauliflower onto the baking sheet. Evenly coat with olive oil, salt, pepper, garlic powder, and onion powder.
  4. Bake for 20 – 30 minutes, until cooked through and golden. 
  5. Allow the cauliflower to cool before using. 
  6. In a medium-sized bowl, add the feta cheese, and break it into small pieces using a fork.
  7. Add the Greek yogurt, lemon juice, and lemon zest. Using a hand mixer, whip the feta mixture until smooth and light. 
  8. Cover with plastic wrap and set aside in the fridge. 
  9. As that sits, prepare the chopped parsley. 
  10. In a medium-sized serving dish, thickly spread on the whipped feta.
  11. Drizzle olive oil over the top of the dish to the desired amount.
  12. Arrange the roasted cauliflower around the entire dish, garnish with parsley and the optional toasted walnut crumble.
  13. Serve immediately with pita bread, toasted sourdough, or tortilla chips.
