This Vegan Pasta Dish with a Greek spin is delicious, easy, and all you really need is one pot to whip it together. No mess!

Who likes to do the dishes? Not me! So that’s why one-pot recipes are some of my favourite recipes. Especially on those busy weeknights when you have a million things you could be doing other than cleaning your kitchen after making a nice home-cooked meal. This Vegan Pasta Dish is incredibly easy, won’t dirty all your dishes, and has a Greek twist that I think you’re going to love.

Artichoke Hearts – I love tossing artichoke hearts into salads or recipes like this Vegan Pasta Dish. Artichokes are loaded with nutrients, and can help improve your cholesterol, blood pressure, digestive health, and the list goes on.

Nutritional Yeast – What’s great about nutritional yeast is that it gives off this great cheesy flavor without needing the cheese. It is loaded with vitamin B12 too, so it’s healthy. I love sprinkling nutritional yeast on just about everything. It can even be good on snacks like popcorn, or you can throw it into salads, juice, cereal, and the list goes on.

  1. Into a wide, deep pot add all your ingredients.
  2. Bring your pot to a boil and cook for around 25 – 30 minutes (or until cooked to your desired consistency)* on medium heat with the lid on.
  3. As your pasta cooks keep an eye on it, and gradually add your extra water to ensure proper cooking and to avoid burning.
  4. Enjoy with fresh herbs!
  5. That’s it – you can thank me later!

If you choose to use GF pasta I suggest starting with less water and cooking as instructed on the package.
