Ingredient Notes:

Spicy Chili Miso: Miso is rich in vitamins and minerals like vitamin K, manganese, zinc, protein and calcium. It is so flavorful and good for you. If you can’t find chili miso, you can swap it out though for chili paste (Sambal Oelek).

Cilantro: Not everyone is a cilantro (or coriander) fan so if you don’t like it, don’t worry. Just exclude it from this dish entirely.

How to make chili oil noodles:

  1. Cook noodles according to package instructions and set aside.
  2. In a heat proof bowl add green onion, ginger and garlic.
  3. In a small frying pan or pot heat 1/3 cup avocado oil and once hot, add to the bowl and stir to combine.
  4. To the bowl whisk in miso, tamari, and lime juice.
  5. Toss the sauce with the noodles, chickpeas, cucumber and cilantro and then enjoy!

Ingredients
  

  • 150-200 g rice noodles
  • 1/3 cup avocado oil
  • 4 green onions, chopped
  • 2 tbsp fresh ginger, minced or shredded
  • 3 garlic cloves, minced
  • 1 tbsp spicy chili miso
  • 3 tbsp tamari or soy sauce
  • juice of half a lime
  • 1/3 cup minced cilantro
  • 1 cup cucumber, julienned (sliced in matchsticks)
  • 1 cup chickpeas

Instructions
 

  • Cook noodles according to package instructions and set aside.
  • In a heat proof bowl add green onion, ginger and garlic.
  • In a small frying pan or pot heat 1/3 cup avocado oil and once hot, add to the bowl and stir to combine.
  • To the bowl whisk in miso, tamari, and lime juice.
  • Toss the sauce with the noodles, chickpeas, cucumber and cilantro and then enjoy!
