This crispy pasta salad takes classic pasta salad and gives it the crunchiest upgrade by air-frying boiled pasta until the edges turn golden and crisp. This air fryer pasta salad is filled with feta, chickpeas, salami, olives, artichokes, fresh veggies, and a creamy Greek yogurt-pepperoncini dressing that is tangy, briny, and SO good. Since I’m your Greek mama, you know this was Greek-inspired. I’ve taken some of my favorite familiar Greek flavors and turned them into a modern pasta salad that is all about texture.

What Makes This Pasta Salad Different
This crispy pasta salad recipe is my spin on the crispy pasta trend. Instead of boiling the pasta and tossing it with dressing, we’re seasoning it and putting it into the air fryer until those little pieces become golden and crispy.
Then there’s the dressing. Plain Greek yogurt gives it a creamy base, while pepperoncini brine and fresh lemon juice bring the acidity. Garlic, olive oil, and Greek seasoning round everything out.
From there, we’re loading it up with feta, chickpeas, Genoa salami, green or Kalamata olives, artichokes, sundried tomatoes, parsley, tomatoes, cucumber, red onion, and pepperoncini.
It’s also very different from my Greek pasta salad with lemon garlic shrimp. That recipe uses soft orzo, shrimp, and a vinaigrette, while this one is all about crispy seasoned pasta, salami, chickpeas, and that creamy yogurt dressing.
Key Ingredients and Why They Work
Gnocchetti Sardi
I use 225 grams (8 ounces) of gnocchetti sardi pasta. Their curves and ridges crisp up beautifully in the air fryer and catch the creamy dressing once tossed.
You can also use orecchiette, which has those little cup-like shapes that are perfect for holding onto bits of feta, chickpeas, veggies, and dressing.
For this air fryer pasta salad, stick with one of these two pasta shapes for the best results.
Greek Freak Seasoning
Spiceology Greek Freak seasoning does double duty here. I use it on the pasta before it goes into the air fryer and again in the Greek yogurt dressing.
Using the same seasoning in both components ties the crispy pasta and creamy dressing together so the salad tastes cohesive rather than like a bunch of separate ingredients.
The Dressing
This dressing is creamy, tangy, and SO flavorful.
Plain Greek yogurt gives it body without needing a long list of ingredients. Pepperoncini brine and freshly squeezed lemon juice bring acidity, while pressed garlic adds punch. Extra-virgin olive oil rounds everything out and helps carry all those flavors through the salad.
This is such a good use of pepperoncini brine that would normally go down the drain!
Feta, Olives, Pepperoncini, and Artichokes
This is where those Greek-inspired flavors really come through.
Feta adds salty creaminess, while the olives, pepperoncini, and marinated artichoke hearts bring lots of briny, savory flavor. Together, they balance the fresh vegetables and creamy yogurt dressing.
Chickpeas and Genoa Salami
Chickpeas and Genoa salami make this salad feel substantial. The chickpeas bring a great texture that contrasts with the crispy pasta, while the salami gives you salty, savory bites throughout.

Fresh Veggies, Sundried Tomatoes, and Parsley
Cherry or grape tomatoes bring juicy sweetness, cucumber adds freshness and crunch, and red onion gives the salad some sharpness. Sundried tomatoes add a more concentrated tomato flavor, while fresh parsley brings everything back to life with its fresh, herbaceous finish.

Tips for Golden, Crispy Air Fried Pasta
The crispy pasta is the star here.
First, drain your pasta really, really well. Cook the pasta to al dente according to the package directions. You want it to have enough structure to handle the next stage of cooking without becoming too soft.
Once it’s drained, toss the pasta with extra-virgin olive oil and Greek Freak seasoning before air frying. During the 10–15 minute cooking time, toss it every few minutes so different sides of the pasta get exposed to that circulating hot air.
The timer is only a starting point, so look for visibly golden, crispy edges.
Once it’s there, spread the pasta across a baking sheet in a single layer. Don’t leave it sitting in one big pile! Spreading it out gives the residual steam somewhere to go instead of trapping moisture between all those crispy little pieces.
How to Keep the Pasta Crunchy
Crispy pasta salad is one of those recipes you want to assemble and eat right away. The dressing tastes incredible on the crispy pasta, but moisture will naturally soften those crunchy edges over time. That’s why I add the pasta at the very end, once all the vegetables, feta, chickpeas, salami, and other ingredients have already been tossed with the dressing.
Let your air fried pasta cool, spread out in a single layer, add it during final assembly, toss, and serve.
This isn’t the salad I’d assemble hours before dinner and leave sitting in the fridge. For best texture, you want to assemble it and enjoy immediately!

This pasta salad has a lot going on already, so you really don’t need to overcomplicate the rest of your meal.

Ingredients
For the pasta
- 225 g (8oz / ½ lb) gnocchetti sardi pasta, (or orecchiette pasta)
- 1 tbsp extra-virgin olive oil
- 2 tsp Spiceology Greek Freak seasoning
For the dressing
- 2 tbsp pepperoncini brine
- ½ cup plain Greek yogurt
- 2 tbsp extra-virgin olive oil
- 2 tsp Spiceology Greek Freak seasoning
- Kosher salt to taste
- 1 large garlic clove, pressed
- 1 tbsp fresh squeezed lemon juice
For the salad
- ¾ cup marinated artichoke hearts, chopped in 1/2 inch pieces
- ⅓ cup sundried tomatoes, drained from their oil and chopped
- ⅓ cup diced red onions
- ¾ cup pepperoncini, stems removed and chopped into rounds (about 12 pepperoncini)
- ⅓ cup fresh chopped parsley
- ¾ cup crumbled feta cheese
- 400 ml (14-15 oz) can chickpeas, drained and rinsed
- ⅔ cup cubed or sliced genoa salami, about 125 grams
- 1 cup cherry or grape tomatoes, halved
- ½ English cucumber, sliced lengthwise and chopped
- ½ cup chopped pitted green and/or kalamata olives
Instructions
Start Cooking- Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta to al dente, according to the package instructions and then drain well.
- Air fry the pasta: After the pasta is well-drained, add the pasta to a mixing bowl and toss with 1 tablespoon of olive oil and 2 teaspoons Greek Freak seasoning. Add the seasoned pasta to the air fryer and air fry at 390F for 10-15 minutes, tossing every few minutes, until golden brown and crispy. Set aside on a baking sheet in a single layer to ensure pasta stays crispy.
- Make the dressing: In a large bowl, whisk together all of the dressing ingredients until well-combined. Taste and add kosher salt as needed to your tastes.
- Assemble the salad: To the large bowl with the dressing add the chopped artichoke hearts, diced sundried tomatoes, diced red onions, chopped pepperoncini, chopped fresh parsley, crumbled feta cheese, drained and rinsed chickpeas, cubed or sliced genoa salami, halved cherry tomatoes, diced cucumber and chopped olives. Add the crispy air fryer pasta and then toss everything together to combine with the dressing in the bowl.
