How to Make This Dakos Salad

  1. Add the barley rye husks to a bowl. Cut the tomatoes in half and grate each tomato onto the barley rye husks, starting with the cut side and grating until you reach the skin of the tomatoes (alternatively, you can finely dice the tomatoes and then add to the bowl).
  2. Sprinkle the 1 1/2 tsp salt over the tomatoes and let sit for 5 minutes. Use a spoon to start to break up the barley rye husks a bit before adding the rest of the ingredients – olives, capers, crumbled feta cheese and then sprinkle the grated garlic, olive oil and red wine vinegar. Toss everything together and adjust the seasoning with more salt and pepper if desired. Enjoy immediately!
