This is truly the simplest family dinner to exist ,and not only tha,t it’s downright delicious. Creamy orzo (inspired by Spanakopita), juicy chicken meatballs, 🍋 lemony 🧄 sauce… damn! My go-to sundried tomatoes is always @dellalofoods, and they’re orzo is such a high-quality choice for this elevated dish, that will make you feel like a 5-star chef!

What I love most about this dish is that it really teaches the techniques to cooking with passion, soul and instinct.

This might be the most unexpected Super Bowl bite you’ll make.

Flaky puff pastry stuffed with my mom’s legendary keftedakia, juicy Greek meatballs loaded with feta, melty cheese, Mediterranean flavors, and fresh mint for that perfect POP, then baked golden and served with cool tzatziki. Whether you’re here for the touchdowns or the snacks, this one wins.

INGREDIENTS

For the meat mixture:

450g ground chicken
1 tsp kosher salt
½ tsp ground pepper
4 small to medium size garlic cloves, pressed
1 small yellow onion, diced
2 tbsp fresh minced parsley
2 tbsp fresh minced dill
2 tbsp fresh minced mint
1 egg
½ tsp garlic powder
1 tsp onion powder
1 tbsp extra-virgin olive oil
1/2 cup grated mozzarella cheese
1/4 cup crumbled feta cheese�
½ cup (plus more if needed) white sesame seeds
1x egg
6 sheets of defrosted frozen puff pastry
Tzatziki for dipping

I regret how I used to eat carrots. I wish I did this instead.
This is the only way I eat them now. Crunchy, satisfying, no notes.

Been making a version of this since university—this version by @cassyeungmoney wins.

Recipe below. Save it 🥕

Ingredients:

2 tbsp rice wine vinegar
2 tsp sesame oil
1 tbsp soy sauce
1 tbsp honey
1 lime, juiced
1/2 tsp kosher salt
1 tsp grated ginger
1 tsp grated garlic
1/4 tsp chili flakes
6 large carrots, peeled and thinly shaved
1/3 cup fresh chopped cilantro
1 jalapeno, seeded and finely diced
1 tbsp sesame seeds

Instructions:

1. To a large glass jar or bowl, add the rice wine vinegar, sesame oil, soy sauce, honey, lime juice, kosher salt, grated ginger, grated garlic and chili flakes. Shake the dressing in the jar to combine or whisk if using a bowl.
2. Add the thinly shaved carrots, fresh chopped cilantro and finely diced jalapeno (or sub chili flakes) and give everything a good shake if using a jar or toss to coat the carrots with the dressing if use a bowl.
3. Top with sesame seeds and enjoy!
4. Refrigerate the salad in an airtight container for up to 3-4 days.

So I hear we’re sharing our 2016 🥲
A year that changed everything.
2014 I started @foodbymaria
2015 I started foodbymaria.com.
2016 I jumped in head first, no floaties, no plan, just vibes and olive oil.
I bought my first camera (RIP to the horrific but passionate food photography).
Moved back to Canada from the UK.
Learned how to love myself while learning how to use manual mode.
Took more photos than I ever have in my life.
I celebrated.
I danced.
I laughed a lot.
I believed, sometimes blindly, but fully.
