This Vegan Cinnamon Bun Bread is so damn delicious. It's warming, it'll make your house smell like heaven, and it's easier to full off than cinnamon rolls! Trust me, you'll love it.

I’ve done it again!! Not to brag or anything, but I think I make pretty bomb cinnamon rolls. I love the spice that the cinnamon adds, combined with the ooey, gooey icing. Cinnamon rolls are serious comfort food. They are so warming on a brisk fall day. This recipe for a Vegan Cinnamon Bun Bread is a unique twist to your typical cinnamon rolls. This is not only easier, but it looks beautiful and tastes amazing.

What is the best vegan milk for baking? 

There are so many vegan milk options out there these days, and it can be hard to know what’s best to bake with. For me, I love using oat milk. It’s creamy, better for the environment than almond milk, and it tastes delicious on its own, or in cooking/baking, like in this Vegan Cinnamon Bun Bread. I’ve recently really fallen for the Califia Farms Protein Oat Milk. Their oat milk is fantastic because it is creamy and tasty, but also provides all the protein you would normally find in dairy milk. 

Unfortunately, a lot of the mainstream brands of plant-based milk you commonly see in the grocery store are full of fillers and hardly have any nutritional value. Califia Farms Protein Oat Milk includes 8 grams of protein per serving with its blend of oat, pea, and sunflower proteins. It’s rich in omega 3, 6, and 9 that it gets from the flaxseed plant, and its essential vitamins are all derived from plants. Seriously, how amazing is that? It’s so great to have a plant-based milk alternative that actually delivers the nutritional value your body needs and benefits from. Plus, it comes in both vanilla and original. Both would taste great in this recipe, but I used the original.

What is the best plant butters for baking? 

Another question I get a lot is what kind of plant butters I like to use in baking, cooking, or just to eat on its own. For me, I really have fallen in love with Califia Farms Plant Butter. They have some fantastic options such as their avocado oil version or olive oil option. Both are awesome to use in baking and cooking. 

What’s great about this plant butter is that it’s made from REAL food like cashews, tiger nuts (which are super high in fiber), nutritional yeast, avocado oil or olive oil, BUT you get that creamy butter-like taste that melts, spreads, and bakes well. These products stay clear from palm and canola oils and provides that yummy taste you’ll love with the use of whole foods, versus just fat like regular non-vegan butters.

How do you make Vegan Cinnamon Bun Bread? 

Okay, enough talking, lets get to the main event, this delicious Vegan Cinnamon Bun Bread. This recipe is easy to make, and is seriously THE BEST! Here’s what you’ll do: 

  1. Preheat your oven and line a bread tin with parchment paper that is lightly greased with cooking oil spray (or your Califia Farms Butter)
  2. In a large bowl, combine the flour, baking soda and powder, and salt. Whisk it all together!
  3. In a separate, medium bowl, add the sugar and egg replacement. Whisk until smooth and textured. Add in the oat milk, butter, and vanilla. Whisk it all up!
  4. Add the flour mixture to the sugar and butter mixture and stir with a wooden spoon to combine
  5. Make the cinnamon-sugar mixture by combining them to a small bowl 
  6. Transfer half the batter to the cake tin. Dust the batter with half of the cinnamon-sugar mixture, and swirl it in using a knife, toothpick or spatula. Repeat this step with the remaining batter.
  7. Bake until a toothpick comes out clean from the center (about 50 minutes) 
  8. While the bread bakes, prepare the glaze by adding the icing sugar and almond milk to a small bowl. Mix till combined.
  9. Cool and then drizzle with the glaze
  10. ENJOY!

Ingredients
  

For the Cake:

Cinnamon Sugar Blend:

  • 3/4 cup white sugar
  • 1 1/2 tbsp. cinnamon

Icing:

  • 2 cups icing sugar
  • 2 tbsp. Califia Protein Oat Milk
  •  

Instructions
 

  • Preheat oven to 350F and line a bread tin with parchment paper and lightly grease with cooking oil spray.
  • Into a large bowl, combine the flour, baking soda, baking powder and salt. Whisk to combine.

  • While the bread bakes, prepare the glaze by adding the icing sugar and almond milk to a small bowl.  Mix till combined.
  • Cool for 5 minutes in the bread tin and remove and cool completely on wire rack.  Once the bread has cooled, drizzle with a generous amount of glaze.
  • Enjoy!

Notes

You can use a regular egg if needed. It will cook the same.

Will this freeze well?

Totally will! Bake it, cool it, and place in a tightly sealed container. Microwave till thawed or bring to room temperature to enjoy!
