This healthy gut recipe is the perfect salad you need to make your tummy happy and satisfied. This salad recipe is really good for your digestion with the addition of fennel. I’ll talk more about this magical, flavorful ingredient below but it’ll make your bowels and gut sing the praises!

  1. First make the vinaigrette in the salad bowl you’re mixing the salad in: whisk together garlic clove, salt, pepper, olive oil and apple cider vinegar until combined.

For the salad

  • 2 fennel bulbs, sliced thin
  • 1 english / long cucumber, shaved or thinly sliced
  • 1/4 cup fresh dill
  • 1/3 cup chopped walnuts
  • 2 tbsp fresh minced basil

I made this tonight as a side dish and thought it was really delicious. I’m not a fan of licorice, but the fennel flavor was so mild and slightly sweet and went great with the cider vinegar. I’ll be making this again!
