This vegan ceviche uses watermelon vs. raw fish to make a refreshing, vegan version of this delicious appy.

What’s something that no vegan has ever dreamed about having? Ceviche! This vegan ceviche will make it possible. I’ve swapped out raw fish with watermelon and it’s made this ceviche the perfect, refreshing, summer appetizer or snack.

Ingredients:

Watermelon: Watermelon is of course a really hydrating melon (it’s in its name after all). It’s packed with nutrients and can be great for your heart health, inflammation, muscle soreness, and even your skin. It can be a great way to keep your kids hydrated this summer!

Fresh Herbs: If there is one thing that makes both raw fish ceviche, and vegan ceviche so good it’s the fresh herbs. It adds so much flavor that cannot be replicated by dried herbs. If you don’t have cilantro and basil. Try fresh mint!

How to make vegan ceviche:

  1. To roast the jalapenos, add to a pan over high heat it lightly sprayed with oil.
  2. Cook and flip continuously until roasted on each side.
  3. Cool slightly, remove the core & seeds, finely dice and set aside.
  4. Prep & add everything to a large bowl, mix together, and season to taste.
  5. Store in the fridge until ready to serve, the longer it sits the more amazing the flavor will become!
  6. Serve with your favorite tortilla chips! Delicious!

Ingredients
  

  • ½ small seedless watermelon diced
  • 3 jalapenos roasted
  • 1 avocado diced
  • 1 medium red onion diced
  • ½ cup green olives roughly chopped
  • 3 garlic cloves minced
  • ¼ cup cilantro chopped
  • ¼ cup basil chopped
  • 2 tbsp. olive oil
  • Juice of 1 orange
  • Juice of ½ lime
  • 2 tsp. salt
  • 1 tsp. garlic powder
  • ½ tsp. cracked black pepper
  • Tortilla chips to serve
