This citrus salad is fruity and flavorful and pairs perfectly with a honey ginger mocktail that’s spicy yet sweet. These two recipes are so fresh and delicious, they’re perfect to add a pop of colour to a dreary winter or for a summer picnic.

How to make the citrus salad:

To make the herb sauce

  1. With a mortar and pestle, make the herb sauce by combining fresh basil, dill, olive oil, parmesan cheese and salt and pepper. Set aside.

To make the blood orange pistachio burrata

  1. Arrange the orange segments and chopped pistachios on a small platter.
  2. Break the burrata into pieces over the orange segments and pistachios.
  3. Drizzle the herb sauce over the salad. Enjoy with toasted bread of your choice.

How to make a honey ginger mocktail:

  1. Make the honey ginger simple syrup: To a small pot combine 1/4 cup honey, 1/4 cup sugar, 1/2 cup chopped ginger and 3/4 cup water. Bring to a boil and then turn to medium-low heat to simmer for 5 minutes. Remove from heat and let it stand for 5 minutes. Strain into a container and set aside.
  2. Make the rosemary sugar rim: Combine the rosemary and sugar and spread on a small plate.
  3. To make one cocktail rub the edge of a low glass with water or lemon wedge. Then press the glass onto the plate, turning the glass to coat the edges in the rosemary sugar.
  4. Add ice to the glass, pour over the honey ginger simple syrup, ritual gin and top with sparkling water.

Expert Tips & FAQ:

What to use instead of a mortar and pestle: If you don’t have a mortar and pestle, you can pulse the herb sauce ingredients in a blender or food processor to make the sauce.

Burrata Substitute: If you can’t find burrata, a soft ball of mozzarella cheese would also work.

Swap the Pistachios: A delicious substitute for the pistachios would be chopped almonds.

For the honey ginger mocktail (makes 1)

  • 1/4 cup honey
  • 1/4 cup white sugar
  • 1/2 cup peeled & sliced ginger root
  • 3/4 cup water
  • 1 tbsp minced fresh rosemary
  • 1/4 cup white sugar
  • 1 oz honey ginger simple syrup
  • 2 oz Ritual Zero Proof Gin Alternative
  • sparkling water
