Manakeesh is traditionally cooked in a wood fire oven (but can be cooked in a conventional oven) with za’atar, cheese, beef or a variety of different toppings. Served on its own or with hummus, spices, olive oil or labneh! It’s truly a magical baked good and rather easy since it’s fairly uncomplicated - making it a very approachable dish to try!

Labneh is the perfect condiment for manakeesh! It also pairs well with many other meats, vegetables and breads. It’s creamy, delicious and tastes like a cross between cream cheese and Greek yogurt. Today we’re making one of my favourite salads and it’s the perfect representation of how I cook and how many over seas cook. Minimalist effort with maximalist flavour. I was raised by a woman who was raised by a woman who used 5-10 ingredients to create magic in the kitchen. I promise you this salad is going to steal your heart and inspire you to do less in the kitchen. Now despite some Greek Blue Zone meals being longer and more time consuming this is truly how simple cooking can be 80% of the time! And this is what I want to teach you most! Sometimes more is more but MOST of the time LESS is lessssss!

Crunchy cabbage, juicy sweet dates and fibre packed creamy beans - YUM!! And don’t even get me started on that dressing - it’s so easy to make and mimics tomato soup almost too perfectly! Next time you make a salad try it! May I suggest something with a nutty grain that can soak up all that flavour?!

Avgolemono (Greek: αυγολέμονο or αβγολέμονο literally egg–lemon) is a family of sauces and soups made with egg yolk and lemon juice mixed with broth, heated until they thicken. The key is to beat the egg whites till foamy and thick, this is an arm work out! This is where most people go wrong! This technique helps the soup come out creamy and hearty, without the cream. It’s a staple in every Greek’s home - consumed weekly by most!

HOT TIPS: If you don’t like rice use orzo! If you’re Vegan make my Vegan Lemon Rice Soup! If you don’t enjoy chicken try it with Chickpeas!
