It's summer and that means it's time to fill your diet with so many yummy and refreshing salads that are loaded with organic (and healthy) foods that will make your soul happy. So, in the spirit of trying new foods this summer, I was inspired to use a special ingredient that's often overlooked, California prunes.
Okay, as someone who lives in the kitchen cooking up my plant-based recipes, my tools and kitchenware are obviously one of my most prized possessions. It's so important to me to use tools that help enhance my cooking experience, make my life easier, and cooking more enjoyable. So let's talk a bit about this unreal frying pan which is seriously, no lie, the best cooking pan I have ever used to make mac and cheese.
As I sit down at my table to eat a simple vegan Thai coconut holy basil noodle bowl, I think to myself: "How simple is this really?" I know the foods I eat aren't really that complicated to make, but does that make me naive? Have you ever put thought into where the ingredients you're adding into your recipes come from? As I stare at my bowl of steaming  coconut holy basil noodles I start to think about each ingredient. Those snap peas are local, limes are from Mexico, noodles are made in America, red curry paste and coconut milk from Asia. It's wild to think about all the places around the globe that you get food from without even realizing it.
This post is a little different than my usual posts but I wanted to write this because I just discovered a product which I absolutely love and I think when I find an organic food product I love I NEED to share it with all of you! Who doesn't love a classic chocolate chip cookie? For me, the smell of cookies in the oven is so comforting, and reminds me of growing up, staring patiently at the oven waiting for the fresh cookies to be finished as a little girl. Making cookies is pretty simple, for most people at least, however, making cookies from scratch can sometimes be annoying. You don't always have all the right ingredients, or you simply just don't have the time and patience. I get it, we're not all that into cooking and baking. Then when you throw in some dietary restrictions like being vegan or gluten free, it can get even more complicated!

However, they are so simple to make and wouldn't you rather know exactly what's going into the food you're eating versus buying processed boxed crackers in the store? I would! This recipe I put together because crackers were definitely a skipped grocery item that I wasn't making on my own. I always bought it! When putting together this recipe for you, I realized how delicious and easy it is to make your own homemade crackers, and you (and your kids) will love them! These bad boys only take 10 minutes to prep and 20 minutes to bake.

This is the perfect post gym vegan recipe that'll leave you full and satisfied! I promise. Recently I discovered Bob's Red Mill's grits and I'm kinda obsessed. It is made with coarsely ground bits of white corn, is healthy and super easy to cook. What I love about it is that it's something cool and different for consuming and enjoying carbs. I noticed grits were popular when I was in Nashville in October and I've been meaning to put together my own recipe using grits since then! Grits are super versatile, vegan, and there are so many unique ways you can use them. You can eat them on their own, make polenta cakes, polenta chips, casseroles, and I've seen people use them to make mini pancakes that act like tacos! Uhmm... yum!
Who doesn't love a good juice? If you're like me, you get sick of drinking water all the time, and it's nice to have a mix of different beverages in your life, especially ones that are healthy, vegan, and add some flavour and excitement to your diet. Juices are great to have in your fridge for a boost of vitamins and healthy plant-based goodness, and did you know you can make juices without having a juicer?
If there is one thing I've learned from my boyfriend Andrew is that he LOVES his chips with curry sauce. This combo is super common in England (where he is from) but is so damn good that I feel like we need to bring this tradition over into other parts of the world because we're seriously missing out! The key to the perfect chip (or fry or wedge.. we all call it something different) is that it's crispy on the outside but fluffy on the inside and I find this recipe to master that just perfectly so you can get the best damn chips with vegan curry sauce you'll be able to make at home. I mean, we can't always fly to England for chips right?
