Yes, that's right, you see what I see.  You see Potato Mushroom Onion Pot Pies and your eyes are telling you that your stomach is very very hungry.  Suddenly, you stop what you're doing and you run to the kitchen to make these delicious, perfect little pot pies.  Don't worry, I don't judge you if you all four and don't share them... they're just that good baby.
I feel so guilty posting this recipe but so happy all at the same time! I couldn't go much longer wondering if my favourite Greek soup could be transformed Vegan, and guess what? It can be and damn baby, it is gooood!! I must admit, Andrew still asks me to make this soup as traditionally done and since we do still eat eggs occasionally I am totally ok with that.  I have mentioned to you all before that I am not Vegan.  I am not Veggie.  I am not anything.  I eat what my body asks for and most of the time that is plant-based, nourishing foods.  The foods I eat make me feel good, help keep my nourished and strong, so at the end of the day that makes me happy.  Suffering with Bulimia for so long really opened my eyes to new ways of loving and appreciating food and I can't bring myself to add Vegan or Vegetarian to the mix right now. Why? Well, I am afraid that would trigger restriction in my heart and that really frightens me.
THE BEST DAMN LASAGNA EVER! This meal is going to blow your mind, yes, it takes a bit more time than the usual culprits but it is so worth it! Andrew and I really struggled not to eat all of this after it was made (we had to wait to photograph it), and damn was that ever hard!

Casseroles have literally been around since the 20s and have been known as the one-dish meal that you can cram a whole whack of goodness into (without spending the whole night in the kitchen). This recipe is one of my favourites for the fall and winter because it seriously warms my soul. The best part is that it’s super simple to make and you’ll have leftovers for lunch or dinner the next day! It’s the meal that keeps on giving.

I know what you're thinking, Maria was healthy when she was young... HAHA  NOPE!  I wasn't addicted to vegetable recipes and vegetarian recipes, I was a full on CAKE ADDICT!   I'm not kidding guys I would eat DQ Ice Cream Cake at any opportunity and half the time it wasn't even my damn birthday *sigh* - poor parents .
