🍲 Ingredients
Fresh Beets – This root vegetable has incredible benefits including being a source of fiber, folate, manganese, potassium, iron, and vitamin C. I love that they’re a great iron source, which can be hard to get enough of, especially when eating primarily plant-based. Beets are so versatile – you can roast them, grill them, or even add them to gourmet grilled cheese sandwiches. Red beets offer that classic earthy, sweet flavor and gorgeous deep color, while golden beets have a milder, slightly sweeter taste with less earthiness and won’t stain your hands or other ingredients.
Pistachios – Pistachios are so tasty and have both antioxidant and anti-inflammatory traits. These special nuts can help lower your chances for cardiovascular disease and are high in fiber, minerals, and unsaturated fat that can help with your blood sugar, and blood pressure as well.
Authentic Greek Feta – For the creamiest whipped texture, choose block feta over pre-crumbled varieties, which often contain anti-caking agents that prevent smooth blending. Look for authentic Greek feta made from sheep’s or goat’s milk for the most traditional tangy flavor. For a vegan swap, use cashew-based feta or blend soaked cashews with lemon juice and nutritional yeast for a plant-based version that’s equally delicious.
👩🍳 How to Make Beet Salad and Feta

1. Roast your beets however you prefer. You can also buy the pre-cooked beets at the grocery store instead

2. Start by making your whipped feta then add it to the base of 2 bowls

3. Top the feta with roasted beets, fresh herbs, and toasted pistachios.

4. Drizzle each with olive oil, fresh lemon, and dust with salt and pepper
🪄 Tips and Tricks
- Prep-Ahead: Pre-cook beets to have in the fridge for easy use and access throughout the week.
- Convenience: If you don’t have time to cook beets, buy them pre-cooked in the fridge section of your grocery store.
- Texture: Make sure pistachios are toasted for the best crunch and flavor contrast against the creamy feta.
- Assembly: Keep ingredients separate until serving to maintain the best textures and prevent the salad from getting soggy.
🗒 Substitutions
- Nuts: Substitute pistachios for your favorite roasted nuts such as walnuts, pecans, or skip nuts altogether if allergic.
- Cheese: Don’t love feta? This recipe is also delicious with goat cheese spread onto the plate instead of whipped feta. You can also use vegan feta for a vegan version.
- Herbs: Use fresh herbs over dried, and feel free to use more of one, a mix of multiple, or whatever you have on hand.
- Greens: Add arugula, spinach, or mixed greens for extra volume and nutrients in your salad.
- Dressing: Try lemon-dill for bright herbaceous flavor, balsamic-maple for sweet-tangy richness, or yogurt-tahini for a creamy Greek twist that complements the Mediterranean flavors beautifully.

Assembled salad: 2 days in fridge (keep dressing separate for best results)

🤔 Common Questions
Yes! Canned beets work perfectly and save time, though fresh roasted beets will have better flavor and texture for this roasted beet salad.
Wrap whole beets in foil and roast at 400°F for 45-60 minutes until tender, then let cool and peel the skins off easily. For faster options: Air Fryer Fast-Track takes just 25 minutes at 400°F, or try Instant-Pot Steam & Peel in only 15 minutes with natural release.
Always peel beets after roasting! The skins slip off easily once they’re cooked and cooled, making the process much simpler and preventing waste.
Wear gloves when peeling roasted beets, or rub your hands with lemon juice and salt afterward to remove stains.
Definitely! Roasted beets freeze well for up to 6 months. Thaw completely before using in salads for the best texture.
Pro Tip: Frozen beets are also amazing in smoothies!

You can prep all components ahead, but assemble just before serving to maintain the best textures and prevent wilting.
