Yummy jackfruit gyros laid out on fresh pita with fresh herbs and tomato toppings. One of the best vegan meals.

Plant-Based Jackfruit Gyros

As you know, I’m Greek and very proud of my Greek roots. I love anything wrapped between pita with a dollop of tzatziki. This jackfruit gyros recipe is one of my fav Greek recipes that is perfectly suitable for a vegan or plant based diet, but will also impress the meat eaters in your house too.

A big bowl of Greek Lemon Rice Soup on counter surrounded by key ingredients. An amazing vegan meal!

Vegan Greek Lemon Rice Soup

My favourite Greek soup has turned vegan and it’s one of my favs. This Greek Lemon Rice Soup is super creamy, authentic, easy, and can be whipped up in one pot. I promise, you’ll love this one. Andrew loves the traditional non-vegan version of this soup, so I’ll make it for him on occasion when we have eggs.

An amazing vegan meatsauce that almost tastes just like the real thing. Easy to make and will be one of your go-to vegan meals.

The Best Vegan Meat Sauce

This recipe can be made in one pot, there’s no meat, and it’s using real ingredients that are accessible to everyone, and any dietary requirement you have in your household or at your next dinner party. This meal is as comforting as a homemade dinner by your grandma. A staple recipe that you’ll want to make again, and again.

A summer spin on Moussaka. Photo of moussaka taken from the side on a white serving plate.

Plant-Based Summer Moussaka

A new vegan twist on the traditional dish, this fresh, light, and airy creation is deconstructed exactly to your liking. Whether you want beefy tomatoes, soft eggplant, or crunchy potato, or all of it, the dish is perfect for picky children, husbands with a “limited pallet”, and it’s even perfect for meal prep.

Plant-Based Coconut Curry Meatball Soup

This recipe was inspired by two other recipes you may have seen on my blog before, my One Pot Coconut Curry Noodle Bowl and my Vegan Greek Meatballs with Whipped Feta and Creamy Orzo. I’ve combined the yummy flavours of curry soup with the hardiness of meatballs for this soup with Coconut Curry Meatballs. And boy is it a match made in heaven!

Fluffy Chickpea Scramble on bread. Side angle of a loaded sandwich with all the fixings.

Easy Fluffy Chickpea Scramble

This easy Chickpea Scramble is a great breakfast or lunch. It’s loaded with flavor and will keep you full with protein so you won’t be back in the kitchen looking for your next meal an hour later…something we’re all familiar with at this point!

Creamy soup in multiple white bowls on countertop. A delicious vegan spin to a classic Olive Garden favourite.

Creamy Spinach Mushroom Gnocchi Soup

My creamy spinach and mushroom gnocchi soup is silky, smooth and delicious. Yes, that may be the only accurate way to describe it. It’s hearty, nourishing, and will warm you up. Inspired by the classic Olive Garden Gnocchi Soup, but in classic FoodbyMaria fashion – I MADE IT VEGAN!

Vegan Greek Meatballs with Whipped Feta and Creamy Orzo

30-Minute Greek-Style One Pot Pasta

As you know, Greek food is my favorite food. I grew up in a Greek family, and my Mom would whip up some of the best Greek dishes. You’ve seen me make vegan variations of the classics, but I also like to add some Greek pizzazz into other recipes too, like this Vegan One Pot Pasta.

A side angle shot of a salad bowl with a grainy, flavorful salad.

Simple Wild Rice Salad

This guide to high protein vegan meals is perfect for getting started with meal prepping your meals. However, I want to draw attention to the Simple Wild Rice Salad in this guide. It’s grainy, flavorful, and perfect for a quick lunch or side with dinner.

Super easy, vegan pot pie. Perfect for a comforting plant-based meal in the fall or winter. In a serving dish, on a tablecloth.

Winter Vegan Pot Pie

This vegan pot pie recipe is perfect for the colder months, and I know I’ve said that with every pot pie I’ve made, but this one has a really intense sense of comfort and wholesomeness. It seriously tastes like real beef pie. The textures are obviously a bit off because it’s beef-less but the wild rice brings so much character to the dish, not to mention nuttiness, texture, and a great source of fiber.

Vegan Butter Chicken in white bowl on top of fresh rice with a side of naan bread.

Vegan Butter Chicken Recipe

In case you need me to state the obvious, there isn’t actually any chicken in this easy vegan butter chicken recipe. Surprise! I’m still vegan ;)! Instead, I’ve used chickpeas and potatoes to really make this Indian curry fill you up and make it a hardy dish for fall and winter.

Easy 15-minute drunken noodles in bowl with chopsticks ready to eat.

The Best 15 Minute Thai Drunken Noodles

I love this recipe because it’s so quick (yet healthy). These Thai drunken noodles are perfect for meal prep or a quick dinner when you’re on-the-go but still want to eat a healthy, nutritious vegan meal.

Big bowl of creamy, vegan ramen

Easy Vegan Ramen

Gone are the days of instant ramen noodles, put down that Styrofoam cup Linda! The ramen dishes you hear about today are beautifully crafted noodle bowls, filled to the brim with all the veggies and flavors of the world. As always, I’ve taken this trendy dish and put my FoodByMaria vegan stamp on it and let me tell you it’s absolutely fabulous.

A pot with bright orange curry with toppings of fresh herbs and red onion.

One Pot Coconut Curry Noodle Bowl

With this super easy one pot Coconut Curry Soup I did my best to capture just a sliver of the authentic bowls I had on my travels in Thailand. All I have to do is close my eyes while I eat this in the dead of winter and I am instantly transported back to hot days and tropical beaches.
