Move over Starbucks, I have a yummy treat that is going to knock your socks off. These Oatmeal Fudge Bars are a copycat of the Starbucks fan fav, and they are way cheaper to recreate a whole batch at-home.

What is the best vanilla extract to use?

There is nothing I could emphasize more than the importance of using a good quality, pure vanilla in your baking. You CAN taste the difference between the real thing and the cheap stuff. How do you make Oatmeal Fudge Bars?

This is a simple recipe that even a novice baker can pull off. Here’s the deal on how to make it:

  1. Preheat the oven to 350F and line an 8X8 baking sheet with parchment. Set aside
  2. To a large mixing bowl, add the butter, sugar and vanilla
  3. Using a wooden spoon or hand mixer combine the ingredients till completely smooth and silky
  4. Add in the vegan egg and combine. Set aside
  5. To a small pot, add all the fudge ingredients and heat on low heat till combined (whisk occasionally to avoid burning)
  6. To the 8X8 pan, add half your oat mixture and flatten
  7. Pour over the fudge mixture evenly and crumble with the other half of the oat mixture
  8. Bake for 25-30 minutes. You don’t want to overbake so your fudge is still nice and soft once cooled
  9. Enjoy!

Ingredients

For the Oatmeal:

  • ½ cup vegan butter, room temperature
  • ¾ cup white sugar
  • 1 tbsp. Simply Organic Vanilla Extract
  • 1 vegan egg, 1 tbsp. ground flaxseed + 3 tbsp. warm water combined
  • 1 ½ cup quick-cooking oats
  • ¾ cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp sea salt

For the fudge:

  • ¾ cup condensed coconut milk
  • ¾ cup chocolate chips
  • 2 tsp. vegan butter
  • 1 ½ tsp Simply Organic Vanilla Extract

Instructions
