Welcome to Episode 4/10 of Greek Blue Zone. A series where I’ll be sharing recipes for longevity. Today we are making Longevity Ikarian Stew. This dish is believed to contribute to the outstanding longevity of the residents of Ikaria, a Greek Island in the Aegean Sea.

One of the factors that makes this a Blue Zone is the diet that they follow which is incredibly Mediterranean diet-focused. Rich in unprocessed ingredients, organic, homemade red wine, frequent walks, deep social connection, love of family and pure, clean air. You probably can’t just pick up and move to a Greek Island right now so this new Blue Zone Series aims to bring you 10 easy, longevity-inspired recipes that you can enjoy in the comfort of your own home. Ingredients —

1 cup Jasmine or other white rice, cooked  
For the salsa —

1 mango, peeled, pitt removed and diced
1 avocado, peeled, pitted and diced
1 jalapeno, finely diced
1/4 cup chopped fresh cilantro
1 garlic clove, pressed
4 tbsp lime juice (about 2-3 limes)
1/4 cup diced red onion
1/2 tsp kosher salt 
For the sauce —

3 tbsp soy sauce or tamari
1 tbsp rice wine vinegar
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp kosher salt
1/4 tsp ground pepper
1 tbsp sesame oil
1 inch fresh ginger, grated
3 garlic cloves, pressed
1/4 cup liquid honey 
For the salmon —

1 1/2 lbs (650-680) salmon filet, skin removed, cut into 1 inch cubes
1 tsp kosher salt
1/2 tsp ground pepper
3/4 tsp garlic powder
2 tbsp extra virgin olive oil, divided 
For serving —

1/2 english cucumber, sliced thin
